"I put out food that I connect to, focusing on Southern flavors but presenting them in elevated, unexpected ways." "People kept talking about catering for various events, and I realized there was a demand for it. That’s when I pivoted to focus more on catering."
Her decision proved wise: word of mouth quickly transitioned into a robust clientele. "For the longest time, everything I got was through referrals. Someone would say, ‘You need to call Chef Stephanie,’ and just like that, I was booked!"
Chef Stephanie's journey is not without its challenges. Maintaining food quality while managing costs has become a crucial focus. "I bounce from store to store, building relationships with local farmers markets and meat suppliers," she shares. "It’s about finding the best quality at a reasonable price."
This hands-on approach allows her not only to keep her customers satisfied but also to ensure the sustainability of her business.
Although she values traditional cooking techniques, Stephanie is not shy about leveraging technology to enhance her creative processes. "I've started using AI and tools like ChatGPT to help brainstorm ideas for menus and themes,” she explains. “It’s like having a virtual sous chef!"
This adaptability has been key, especially when working with clients who have specific dietary restrictions or last-minute changes. "I’ve learned to always have a backup plan. Flexibility is crucial in this business," she emphasizes, detailing how she has navigated sudden dietary requests with grace and efficiency.
Chef Stephanie has ambitious goals ahead: "Short-term, I aim to pick up more corporate clients and boost my social media presence. Long-term, I want to have my own kitchen space — maybe even a commissary kitchen where I can support other budding chefs."
Looking ahead five to 10 years, she sees the hospitality and tourism in South Carolina evolving as more people relocate to the area. “We’re becoming a destination for food lovers, especially with the recognition of Michelin Star dining. I see there being an even greater demand for elevated, but approachable experiences across weddings, corporate events, and private dining,” she said, emphasizing the need for a continuous focus on “thoughtful, seasonal menus to reflect the region.”
Her vision reflects not only her commitment to personal success but also her desire to elevate the culinary scene in Greenville.
“Over the past several years, the hospitality and tourism industry has become much more experience-driven,” noted Chef Stephanie as she acknowledged the shift toward flexibility, a need for hybrid service styles post pandemic, smaller curated gatherings, and high-quality drop-off or corporate catering options. “At the end of the day, people want it to feel special and not complicated.”
