Charlie Cavalaris’ retirement didn’t last long. Just about two months, actually. The former managing partner of the well-known and much-loved Stax Grill says now, “I didn’t work for a couple of months and found out I was not ready for retirement. I missed the restaurant business and being around the public.” 

Now Charlie has become part of Greenville Meats, joining two old high school friends. “This is a natural for me,” he says. “Food has always been my passion. I grew up working in drive-ins during the summers as a teenager, then I opened my first restaurant and worked it for 6 years, then I worked as a food distributor for 11 years. Being Greek, what other profession is there?”  

Cavalaris continues, “We’ve been around a long time, but now, with my restaurant experience, it makes this easy. We are meat distributors, I come to your business and discover your needs and sell you what you need. I know what grade and cuts of meat you need by going over your menu and your menu prices. Portion sizes are also important. I can and have figured food costs to make sure you are making money.” 

Cavalaris says he also caters to individuals for big or small events.  

“We can sell you any cut of beef, pork, chicken, and some seafood. Meats are priced by today’s market prices. For example, there are several grades of rib eyes, strips and tenderloins, each a different price.” 

“In five years, I hope we are working for every food company in our area,” says Cavalaris. “This will come by word of mouth from our customers. It is my job to make this happen by hard work, customer service and the best products. We are getting more into the meat markets in the area. As the industry changes, so do our products. We plan to expand with the growth.”
